I
gave up smoking three years ago and within three months I started
to experience severe IBS (Irritable Bowel Syndrome) which was being
caused by several food intolerances. Over time this became more
acute causing me to have days off work as I needed to be near a
bathroom constantly. I tried detox diets which improved my health
in the short term, but I was still adding new foods to the list
I was intolerant to.
Only
recently have I discovered that I had something called leaky gut
syndrome (don't bother asking your Doctor though, mine denied it
exists!). Through a course of Ayurvedic medicine I have now regained
a tolerance to many of the foods I had had to avoid (fructose, sulphites,
cumin, turmeric, legumes, peppers, chillis, etc), though I still
have a problem with Gluten & Dairy.
Experimenting
with bread recipes after my initial disappointment with the results
from my Panasonic SD253 bread maker made me determined to produce
something edible. I felt that it had to be possible and have since
proved that good bread is actually quite easy to produce once you
know how. The Panasonic SD253 bread maker is the best available
for Gluten free baking, but without the right recipe it was just
a waste of £100.
I have
known Cheryl and her family for several years. We were discussing
the problems I had been having with food intolerance one day last
summer. She asked for a copy of my bread recipe for her son and
from that day on we have exchanged tips and recipes. Cheryls story
is below. |

I am married to Richard
and we have two children- a boy aged 9 and a girl aged 7. Our
son was diagnosed with Asperger’s Syndrome, which is a form
of Autism, 2 years ago.
Determined to find some help for him I researched Autism and discovered
that many children on the Autistic Spectrum appear to have an
intolerance to gluten and dairy products. The physical symptoms
of intolerance included distended stomach, stomach cramps and
constipation all of which our son suffered from. A test carried
out by the Autistic Research Unit based at Sunderland University
suggested that our son may benefit from the exclusion of all gluten
and dairy products from his diet.
Within a few days of starting the diet, as was predicted, our
son started to suffer from incapacitating stomach cramps and many
other unpleasant symptoms associated with the withdrawal of any
harmful substance from the body – a reaction which would
have been unlikely to occur if he did not have a problem with
the withdrawn foods. After about two weeks these symptoms became
less intense and eventually disappeared.
He has now followed the diet for about 18 months and he says that
he feels much better, no longer suffering from distended stomach,
stomach cramps or constipation. He has noticed that his hearing
is more focused and loud noises cause him less discomfort and
distress. His teachers find him much calmer and they have been
able to establish stronger eye contact with him – a change
which was immediately noticed within days of starting the diet.
Finding acceptable gluten free and dairy (casein) free alternative
foods has been very difficult and our son found that many of the
prepared foods available in supermarkets offered little choice
and were unpalatable. I was determined that he should continue
to enjoy his favourite foods and with work, research and perseverance,
I have developed a range of recipes which are delicious and wholesome
with few, if any, additives. Home baking is enjoyed by our son
with the rest of the family and visitors alike. Everyone finds
the food very digestible and tasty.
